1 c Yellow cornmeal
17 oz Whole kernel corn
1/2 ts Baking soda
3/4 ts Salt
1 Jalepeno peppers
-chopped
2 Eggs
-beaten
1 c Buttermilk
Pimento
-chopped
1/2 c Margarine
-melted
1 c Cheddar cheese
-grated
1 md Onion
-chopped
Mix all ingredients except cheese. Pour into a well-greased 9×9″ pan.
Place the 1 C. cheese on top. Bake at 350^ for 45 minutes. Serves 4-6
people.
