Wainwright Inn Puffed Pancake With Black Cherries And Almond

Ingrients & Directions


4 lg Eggs — fresh
1 c Milk
1/2 Lemon — grated rind and
Juic
1/2 ts Vanilla
1 c Flour
1/2 Stick unsalted butter
1/2 c Frozen black cherries —
Thawed
1/2 c Sliced almonds
1/2 c Powdered sugar

Preheat oven to 475 degrees. Whisk together eggs, milk, lemon rind and
vanilla. Add flour and beat until batter is smooth. Place butter in
greased baking dish and place in oven until butter melts. Pour in batter
and bake 20 minutes until puffed and golden.

Remove from oven and sprinkle with powdered sugar and lemon juice. Offer
black cherries, almonds and additional powdered sugar as toppings.

Makes 8 servings.
