Orange Pound Cake

Ingrients & Directions


Vegetable cooking spray
1 3/4 c Sifted cake flour
2 ts Baking powder
1/4 ts Salt
3/4 c Sugar
1/2 c Vegetable oil
1/2 c Unsweetened orange juice
1 ts Grated orange rind
4 Egg whites; stiffly beaten

Coat the bottom of an 8 1/2 x 4 1/2 x 3-inch loaf pan with cooking spray;
dust with flour, and set aside.

Combine flour and next 3 ingredients in a large bowl. Add oil and orange
juice; beat at medium speed of an electric mixer until batter is smooth
(batter will be thick). Add orange rind and about 1/3 of egg whites, and
stir gently; fold in remaining egg whites.

Pour batter into prepared pan. Bake at 350 degrees for 45 minutes or until
a wooden pick inserted in center comes out clean. Cool in pan 10 minutes;
remove from pan, and cool on a wire rack. Yield: 16 servings.
