1/2 Canola oil
1/2 c Applesauce
3 Carrots; finely grated
1 1/4 c Brown sugar
1/4 c Honey
1 ts Vanilla
4 Eggs; lightly beaten
2 ts Baking soda
2 c All-purpose flour
2 ts Cinnamon
Powdered sugar
Combine the first seven ingredients in a large mixing bowl and combine
well. Add the soda, flour and cinnamon and mix until well combined. Spray
muffin tins with non-stick cooking spray and fill each muffin cup about
3/4’s full. Bake at 350 for 20 minutes. Remove muffins from tins while
still warm. When cool, sprinkle muffins with powdered sugar.
