1 1/2 c Flour; all-purpose 1 tb Instant coffee
1 ts Baking powder 3/4 c Butter; softened
1/2 ts Salt 1 Egg
1/2 c Sugar 1 1/2 c Flaked coconut
1/4 c Brown sugar; firmly packed
Pre-heat oven to 350 degrees. In large bowl combine all
ingredients except coconut. Blend well with mixer. Stir in coconut;
mix thoroughly.
Drop by rounded teaspoon onto ungreased cookie sheets. Bake at
350 degrees for 10 to 12 minutes. Cool. Makes 36 to 42 cookies.
