Oatmeal Raisin Cookies (lf)

Ingrients & Directions


2 Egg whites
1/3 c Light corn syrup
1/2 c Sugar
1 ts Vanilla
1 c Flour
1 c Multi-grain oatmeal
1/2 ts Baking powder
1/2 ts Baking soda
1/2 ts Cinnamon
1/2 c Raisins

Preheat oven to 375?F. Lightly spray cookie sheet with nonfat cooking
spray. Blend egg whites, corn syrup, sugar and vanilla in a large bowl
until smooth. Add flour, oatmeal, baking powder, baking soda and cinnamon.
Mix very well until all the dry ingredients are blended. Fold in the
raisins. Drop the mixture, 1 to 2 inches apart, on the cookie sheet. Bake
in preheated oven for 10 minutes, until bottom of cookies are lightly
browned.

Serves 24, 84 calories per serving, Dietary Fiber 1 gram.
