20 Ritz crackers; crushed
1 c Sugar
3/4 c Chopped pecans
3 Egg whites
1/4 ts Cream of tartar
1 ts Vanilla
1/2 pt Cream; whipped and sweetened
-to taste
Mix pecans, 1/2 cup sugar and cracker crumbs in bowl. Beat egg whites and
cream of tartar until stiff; gradually add vanilla and 1/2 cup sugar. Fold
crumb mixture into egg white mixture; pour into greased pie plate and bake
at 350 for 20 minutes. Cool thoroughly; top with whipped cream. Chill well
before serving.
