1 c Shredded Cheddar cheese
3/4 c Flour
1/2 ts Salt
1/4 ts Dry mustard
1/4 c Melted margarine
1 pk Chopped spinach
1/2 c Milk
1/2 c Half and half or evaporated
-skim milk
1/2 c Finely chopped onion
1/4 c Chopped mushrooms
1 ts Salt
1/4 ts Nutmeg
3 Eggs (or use part egg
-substitute)
Mix well: Cheddar cheese, flour, salt, dry mustard and margarine. Pat into
9″ pie pan. Filling: Cook spinach and drain well. Add milk, half and half,
onion, mushrooms, salt and nutmeg. Beat eggs. Add part of eggs to spinach.
Mix well. Add rest of eggs. Pour into prepared 9″ pie crust. Bake at 400 F.
for 15 minutes. Reduce heat to 325 F. and bake for 20-25 minutes more.
