Latvian Cranberry Bread

Ingrients & Directions


2 c Flour; sifted
3/4 c Sugar
3 1/2 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
1 Egg
2 tb Grated orange rind
1/2 c Orange juice
3 tb Melted butter
2 tb Hot water
1 1/2 c Cranberries; halved

Sift flour, sugar, baking powder, baking soda and salt into a large bowl.

Beat egg lightly in a small bowl, stir in orange rind and juice, butter and
hot water. Add to dry ingredients; mix thoroughly. Fold in cranberries.
Turn batter into a well-greased 9x5x3-inch loaf pan.

Bake at 350F for 50minutes or until cake tester inserted in center comes
out clean. Remove from pan; cool on wire rack.
