Louise’s Chocolate Zucchini Bread

Ingrients & Directions


3 lg Eggs
2 c Sugar
1 c Oil
2 oz Baking chocolate
1 ts Vanilla
2 c Zucchini — grated
1 ts Cinnamon — or more
1/4 ts Baking powder
1 ts Baking soda
1 c Chopped nuts — or more
3 c Flour
1 ts Salt

Beat eggs til yellow. Beat in sugar & oil. Melt chocolate. Stir into egg
mixture. Sift flour with salt, cinnamon, baking powder & soda. Stir into
well oiled pans – angel food or 2 9×5 loaf pans. Bake 350 for 1 hour 30
minutes [START WITH LESS TIME). Cool in pans for 5 to 20 minutes. Turn out
on rack and cool.
