Pita (middle Eastern Flat Bread, Kimaje)

1 tb Or package yeast
1 tb Salt
2 tb Honey
2 1/2 – three cups warm water
5 – 6 cups flour

Place the yeast, salt, honey and 1/2 cup warm water in a small bowl
and let stand 10 minutes in a warm place. Place 4 cups flour in a
large mixing bowl. Add the yeast mixture and 2 cups water. Mix
vigorously for 1 minute and add 1 more cup flour. On a floured board,
knead the bread for 10minutes, adding more flour if necessary to make
a medium stiff dough. Clean
