1/3 c Molasses
2/3 c Honey
2/3 c Sweet potatoes, mashed
1/3 c Oil
2 Eggs — beaten
1/2 ts Cinnamon
1/2 ts Nutmeg
1/4 ts Cloves
1/4 ts Salt
1/4 ts Mace
1 ts Freshly grated ginger
1 c Flour, whole-grain wheat
1 c Flour, all-purpose —
Unbleached
1 tb Baking powder
1 c Walnuts — or pecans,
Chopped
Preheat oven to 325F. Oil a 9X5X3 loaf pan.
In a large bowl, blend molasses, honey , sweet potatoes, oil and eggs.
In small bowl, combine remaining ingredients. add to potato mixture
and stir until well mixed.
Spoon batter into loaf pan and bake until a toothpick inserted in
middle comes out clean – about 1 hour. Turn onto wire rack to cool
before slicing.
