4 Bananas, mashed
1 c Sugar
1 Egg
1 1/2 c Flour
1/4 c Butter, melted and cooled
1 ts Baking soda
1/2 ts Salt
1 c Pecans or walnuts, chopped
Mash bananas with sugar (or mix in bowl of Kitchen-Aid mixer). Sift dry
ingredients together in a bowl. Mix egg with cooled melted butter. Add egg
mixture to banana and sugar mix. Stir in dry ingredients and nuts. Pour
into loaf pan. Bake at 325 for about 1 hour or longer. Test for doneness
with toothpick.
