300 g Plain flour
25 g Caster sugar
3 ts Baking powder
1 Pinches salt
110 g Slightly salted butter
50 g Mild Cheddar cheese; grated
Milk to moisten
4 Eating apples
50 g Soft brown sugar; (50 to 80)
1/2 ts Powdered cinnamon
A little melted butter
Sieve the flour, caster sugar, baking powder and salt together into a
bowl. Rub in the butter, then mix the cheese in.
Add enough milk to moisten the mixture and form a soft but not sticky
dough. Knead the dough lightly on a floured board. Pat it out on to an
ungreased Swiss roll tin about 18-25cm.
Peel, core and thinly slice the apples and arrange on the dough.
Sprinkle with the brown sugar and cinnamon, brush with the melted
butter and bake for 25 minutes at 220C/425F/gas 7. Serve warm.
