Apple Crunch Pupcakes

Ingrients & Directions


2 3/4 c Water
1/4 c Applesauce
1/8 ts Vanilla
1 md Egg
2 tb Honey
4 c Whole wheat flour
1 c Dried apple chips
1 tb Baking powder

-FROSTING: CAROB-
12 oz Fat free cream cheese
3 ts Carob powder
1 ts Vanilla

Preheat oven to 350 degrees.

Mix water, applesauce, vanilla, egg and honey together. Combine flour,
apple chips and baking powder. Add wet ingredients to dry and mix
thoroughly, scraping sides and bottom to be sure no dry mixture is
left.

Pour into large muffin pans sprayed with vegetable spray. Bake at 350
degrees for approximately 1 to 1 1/4 hours, or until toothpick
inserted in center comes out dry.

Yield: Approximately 12 to 14 pupcakes
