3 lg Raw white potatoes
1 tb Lemon juice
2 tb All-purpose flour
1 ts Sugar
1/2 md Onion — grated
1 1/2 ts Baking powder
1/4 ts Ground cayenne pepper
1 Egg — beaten
1/4 ts Salt
1 ds Black pepper
Peel and grate potatoes; toss with lemon juice and drain. Combine
with remaining ingredients. Measure out 1/4 to 1/3 cup mixture and
form into patties. Place patties into hot oil in skillet; cook until
brown. Turn and cook until brown. Serve with eggs and favorite
breakfast meat.
