2 c Sugar
5 Eggs
1 c Shortening
1 c Buttermilk
2 c All-purpose flour
1 1/2 c Flaked coconut
1 ts Coconut extract
1 1/2 ts Baking powder
1 ts Salt
-GLAZE-
1 c Sugar
1/2 c Water
1 ts Coconut extract
CAKE: Cream sugar & shortening. Add eggs, one at a time, beating after each
addition. Mix flour, salt & baking powder. Add to creamed mixture,
alternately with buttermilk. Add extract. Add coconut. Bake in greased tube
pan for 1 hour at 350 or until golden brown. GLAZE: Combine ingredients.
Boil 1 minute. Pour over top of cake while both are still warm.
