2 Eggs; beaten
1 1/4 c Oil
1 ts Vanilla
3 c Fresh; chopped apples
3 c Flour
1 1/2 ts Soda
1/2 ts Salt
2 c Sugar
2 ts Cinnamon
1 ts Nutmeg
1 c Chopped pecans
In mixer blend eggs, oil & vanilla. Add apples. Add sugar, flour, soda,
salt, cinnamon & nutmeg. Mix well. Add chopped nuts. Pour into greased &
floured bundt or tube pan. Bake at 350 for 1 hour to 1 hour 15 minutes or
until done. This cake may be baked in 3 small, long pans. Freezes well.
