1 lb Fresh crabmeat
1/2 c Cracker crumbs
2 tb Mayonnaise
1 tb Prepared mustard
1 Egg; beaten
1 ts Minced parsley
1 ts Lea & Perrins
4 tb Butter
Lemon wedges
Gently mix crab with cracker crumbs. In another bowl, combine mayonnaise,
mustard, egg, parsley and Lea & Perrins. Blend this mixture with meat. Make
patties about 3 inches across. Saut in butter for about 3 to 5 minutes on
each side. Yield: 4 servings.
