340 g Wholemeal; (wheat) flour
2 ts Baking powder; (10 g)
60 g Brown sugar
1 ts Cinnamon powder; (5 g)
120 g Walnuts; chopped
340 g Seedless dates
60 g Butter
50 ml Milk
Orange juice for binding
1 ts Vanilla essence; (5 ml)
MIX flour, baking powder, brown sugar, cinnamon powder and walnuts
together. In a separate bowl, mix dates, butter and milk. Fold together the
flour mixture and the date mixture, adding enough orange juice to give it a
soft consistency. Add vanilla essence and mix well. Pour the batter into a
well greased cake tin. Bake in a pre-heated oven at 160o C/ 325o F for one
hour 15 minutes or until a skewer inserted in the centre comes out clean.
