1/2 c Butter or margarine
1 1/2 c Brown sugar
1 cn Sliced pineapple (20 oz);
-drained well, save juice
6 Maraschino cherries; cut in
-half
1/3 c Walnut halves
1 pk Yellow cake mix
1 c Pineapple juice (from can
-pineapple)
3 Egg
Place half the butter in a 9 inch glass pie dish. Microwave at high (100%)
until melted, 20 to 30 seconds. Sprinkle half the brown sugar over the
butter. Arrange half the pineapple slices over brown sugar. Place a cherry
in the center of each slice. Place walnuts. in between slices of pineapple.
Repeat with second 9 inch dish. In a mixing bowl, combine cake mix, eggs
and pineapple juice. Beat at high speed 2 minutes, and 1 minute at low
speed. Pour over pineapple arrangement. Place one layer on an inverted
saucer in the microwave oven. Microwave at medium high (70%) 8 minutes.
Microwave at high (100%) until wooden pick inserted comes out clean, 3 to 4
minutes. Let stand 5 minutes. Invert onto serving plate. Repeat with second
layer.
