1 Envelope knox unflavored;
-gelatin
1/4 c Cold water
3/4 c Boiling water
Sweetener equal to 1/2 cup;
-sugar
1 pk (8 oz.) lite cream Cheese;
-softened
1 Container; (8 oz.) lite sour
-Cream
1 ts Vanilla extract
Fresh fruit; optional

Have all ingredients at room Temperature.
In blender, sprinkle gelatin over cold water. Let stand 2 minutes. Add
boiling water and process at slow speed until completely dissolved. Add
remaining ingredients, process until blended. Pour into 8 or 9 inch inch
pie crust prepared with 3/4 cup graham cracker crumbs and 2 tbs. melted
diet margarine. Chill until firm. Garnish with fresh fruit if desired.
Makes 10 servings.. Per serving with crust: calories 120, protein 4 gms.,
carbs. 15 grams (using sugar), total fat – 5 g (unsat. fat 2 g), sodium 158
g, cholesterol 12 mg.
