3/4 c Wheat flour
3/4 c Unbleached flour
3/4 c Wheat bran; unprocessed
2 tb Sugar
1 tb Baking powder
2 ts Cinnamon
1/4 ts Salt
1 ts Vanilla
2 Egg whites; whipped
1 1/2 c Buttermilk*

with cooking spray and heat on medium until hot. In a mixing bowl,
combine flours, wheat bran, sugar, baking powder, cinnamon, and salt.
In another mixing bowl, combine vanilla, egg whites, and buttermilk.
Mix dry ingredients with wet ingredients just until moistened. Ladle
in the batter, using 2 or more tablespoons per cake. Cook for 2
minutes, then flip carefully and cook for 2 minutes more. Repeat with
remaining batter.
