2 Egg whites
1 ds Salt
2/3 c Sugar
1/2 ts Vanilla extract
6 oz Semi-sweet chocolate morsels
1 c Chopped pecans
Preheat oven to 350 degrees. Beat egg whites (at room temperature) in
large mixing bowl until foamy; add salt. Gradually add sugar, 2 tbsp.
at a time, beating until stiff peaks form. Fold in vanilla,
chocolate, pecans. Drop mixture by heaping teaspoonfuls 2 inches
apart onto aluminum foil-lined cookie sheets. Place in oven and
immediately turn off heat. Do not open door for at least 12 hours.
Gently remove cookies from foil. Store in airtight container. These
are really good. Makes 3 dozen cookies. Piedmont Region, North
