Baked Hush Puppies 2

Ingrients & Directions


1 c Yellow cornmeal
1 c All-purpose flour
1 tb Baking powder
1 ts Sugar
1 ts Salt
1 ts Pepper
2 lg Eggs, lightly beaten
3/4 c Milk
1/4 c Vegetable oil
1/2 c Chopped onion

Combine first 6 ingredients in a large bowl. Make a well in the center and
set aside. Combine the remaining ingredients. Add to dry mixture. Stir
until moistened. Coat miniature- muffin pans with cooking spray. Spoon 1
tablespoon batter into each cup. Bake at 425F for 15 minutes. Remove from
pans and serve immediately.

Yield: 3 dozen
