CRUST
1 1/4 c Vanilla wafer crumbs
1 1/2 ts Lime rind
1 tb Sugar
1/2 c Melted butter or margarine
Filling
1 Envelope gelatin
1 c Sugar
1/4 ts Salt
4 Egg yolks
4 Egg whites
1/2 c Lime juice
1/4 c Water
1 c Whipped heavy cream
1 ts Grated lime peel
l Green food coloring
Mix up the crust ingredients and smooth ’em over the bottom and sides
of a 9-inch pie plate. Now bake that crust at 375 degrees for about 8
minutes. Now let it cool down. Mix up the gelatin, 1/2 cup sugar and
salt in a suacepan. Now beat up the eggs, lime juice and water
together and stir it into the gelatin mix. Now cook it over medium
heat, stirring, just until the mixture comes to a boil. Now remove it
from the heat. Now mix in the lime peel and green food coloring. Only
put in enough food coloring to give it a light green color, probably
a couple of drops. Now chill, stirring occasionally until mixture
thickens. Now beat the egg whites, and gradually add the sugar,
beating it until it gets stiff. Now fold in gelatin mixture and the
cream. Pile all this into the shell, and chill until firm. Before
serving top it with some additional whipped cream. Now trim it up
with the grated lime peel. Be sure and serve this one to your
out-of-town visitors for a big hit!
