1 3/4 c Cornmeal
1 1/2 ts Salt
1 ts Baking powder
1/2 ts Baking soda
1 c Buttermilk
1 Egg
1 sm Onion; finely chopped

Hi everyone! This recipe has been in our family for a long time. Combine
cornmeal, salt, baking powder and baking soda in medium sized bowl. Beat
buttermilk and egg in a small bowl; add to the dry ingredients with onion,
mix to blend ingredients. Pour oil in a medium-sized saucepan to the depth
of 3-4 inches. Heat to 350 degrees (test with thermometer). Scoop out 1
tablespoon of the dough; push off the spoon into the hot oil. Fry a few at
a time, turning once. They will turn golden brown and float to the top,
about 3-5 minutes. Remove with slotted spoon to paper towels. *These can be
frozen after they are cooked and cooled, for at least a month. To prepare
frozen: Bake at 425 degree oven for 15 minutes until heated through.
