2 c White Cornmeal 2 Egg Yolks
(Stone-Ground) 2 tb Butter Or Shortening —
1/2 c Flour Melted
3 ts Baking Powder 1/2 c Milk
1 ts Salt Vegetable Oil — for
1 ts Sugar Deep-frying
1/2 md Onion — grated
Combine the dry ingredients with the onion. Mix in the eggs,
shortening, and enough milk to make a spongy dough. Mix only briefly.
Drop by teaspoons into deep hot fat, as for French fries.
Serve with fish, or with toothpicks as an hors d’oeuvre at your next
cocktail party.
