Peaches

1 Egg
A pinch of salt
1 tb Sugar
Milk

This is a variant of chess pie and a favorite Southern dessert in
Tennessee, three or four chess pies sometimes are stacked one atop another,
and slices of the stack are served.
Use one crust. Peel the peaches and halve them, turning the hollow side
upward; sweeten them as you would
for peach pie. Beat together the egg, salt, and sugar. Add milk enough to
cover the peaches. Bake. Eat when
partially cool.
